Weekly Menu

So, since I am busy packing and everything this week I have created a menu of quick, yummy meals that can seriously be fixed in a jiffy.


Tuesday-
Spaghetti--instead of regular spaghetti though I used Vermicelli because it cooks in half the time.  Of course I always use at least half whole grain pasta.  (Literally, I buy one regular bag of pasta and one whole grain and then mix them together.)  :) So for my hubs I used half of a jar of marinara sauce and put 10 meatballs in a pot to heat. Then for myself I made pasta primavera with 1 c. veggies sauted slightly with 2 tsp. Olive Oil and then tossed with the vermicelli and topped with shredded Parmesan cheese.


Wednesday-
Cream Dried Beef, or sometimes known as Creamed Chipped Beef, served over toast with veggies on the side.


Thursday-
Macaroni and Cheese, that I made a week or two ago and have in the freezer, served with veggies.


Friday-
More than likely another spaghetti dish...


I also think I will bake some bread/rolls this week but as you can see I am certainly making dinners easy on myself. :)
