Fiesta Salads


This is what I made my husband and I for dinner tonight.  :)  We really enjoyed them too.  They tasted quite a lot like the ones from Qboda, probably because of that dressing I made earlier today.  Anyway, here's the recipe:

Fiesta Salad:

Lettuce (I used Green Leaf, but Qdoba uses Romaine...use whatever you have on hand, or like!)

Cilantro Lemon Dressing

Corn Salsa

Chicken, cooked or canned

Cheese (I used Cheddar/Monterrey Mix)

Tortilla Bowl (optional...see below for what I did.)

1.  Place a generous serving of lettuce into bowl/tortilla bowl.

2.  Put dressing on lettuce.

3.  Put chicken on top of lettuce.

4.  Then put a generous helping of salsa on top.

5.  Lastly, sprinkle cheese on top of it all.

6.  Enjoy!

I am guilty as charged in the fact that I really, really enjoy a good fried tortilla shell for a salad.  But...since those are full of fat and calories, I try to steer clear....most of the time.  Anyway, here's a great alternative to frying the tortillas for bowls.  You can find these pans at Target, Bed Bath and Beyond and other places.  All you have to do is put the tortilla in, bake at 350 degrees for about 10 minutes and you have a crispy, edible bowl for a salad!  :)
