Creamy Potato Soup

Just in time for the colder weather around the country!  This is a rather traditional Potato Soup recipe with an added creamy ingredient!  Yum.  :)

Creamy Potato Soup:
5 c. Potatoes, diced and cooked
1.5 c. Milk
1.5 c. Water
1.5 c. Carrots, diced
1 c. Celery, diced
1 Medium Onion, diced
3 T. Butter
3 T. Flour
1 t. Salt
1/2 to 1 t. Pepper
8 oz. Cream Cheese, cut into cubes

1.  Sauté the onion in the butter.  
2.  Once the onion becomes transparent add flour, cooked potatoes, milk and water.  Stir and, if desired, slightly mash potatoes.
3.  Stir in carrots, celery, salt and pepper.  Let simmer for about 15 minutes.
4.  About 30 minutes before you are ready to serve the soup add in the cream cheese and stir occasionally until melted.
5.  Serve and enjoy!  :)
