Gluten Free Oatmeal Scotchies

Yum.  I love Oatmeal Scotchies.  Here's my gluten free version of the classic! :)


Gluten Free Oatmeal Scotchies (modified from Nestle Oatmeal Scotchies Recipe)
1 and 1/4 c.  Oat Flour (Store-bought or homemade)
1.5 t.  Baking Soda
1/2 t.  Salt
Pinch of Cinnamon
1 c.  Butter/Shortening
3/4 c.  Sugar
3/4 c.  Light Brown Sugar
2  Eggs
1 t.  Vanilla
3 c.  Quick Oats
11 oz. pkg.  Butterscotch Chips

Just mix together all the ingredients.  Preheat the oven to 325 degrees and bake cookies for about 7 minutes! Enjoy!  :)

Nut Cookies (Flour-less)

The few times that my hubby and I have gone to that wonderful Farmers Market in Durham, we've gotten these delicious nutty, chocolaty cookie bars.  So, today I felt like making some cookies that resemble the way those taste.  Here they are....and I think you'll be pleased.  Not only are the gluten free, flour-less cookies, but they are delicious!!  :)

Almond Cookies (Yields about 2 dozen cookies)
1.5 c.  Almonds (or other nuts) *
1 c.  Brown Sugar, packed
1 egg white
1 t. Oil
1/4 c.  Chocolate chips, optional

1.  Put the nuts in a food processor or blender and pulverize like so....they should resemble flour when they are done!  :)
 2.  To the pulverized nuts add the rest of the ingredients, and then process until well blended.
 3.  Lightly grease your baking sheet, and drop by the teaspoonful leaving about 2 inches between each cookie.
 4.  Bake at 325degrees for 8-12 minutes.
 Enjoy!  These would go great with a cold glass of milk!  (So I'm told...)  :)

*For high altitude use an extra 1/4 c. of nuts making it 1.75 c. of nuts.

Flour-less Chocolate Cake for Two

Ok, whether you are a celiac or not, this recipe will indulge your craving for chocolate and not add on the pounds!  This flour-less version of chocolate cake will satisfy and keep you wanting more.  :)

I have now made this recipe for two, instead of just for one.  So you can share it with your special someone this time.  ;)

Recipe:
2 egg, separated
2 oz. chocolate, semi-sweet works best
2 T. sugar

1.  In a medium-sized bowl use a hand mixer to fluff up the egg whites.  Set it to high and run it until it is white and peaks form.


2.  Melt the chocolate.  (Either in the microwave watching carefully and checking often, or on the stove in a double boiler.)

3.  Let chocolate cool some and gradually add the egg yolks into it.

4.  Mix the sugar into the chocolate mixture.

5.  Now, carefully fold the chocolate mixture into the egg whites.  Combine gently, but thoroughly.


6.  Transfer the batter into a small dish suitable for baking.  (I used an 8″ round casserole dish.)

7.  Bake in a preheated 350 degree oven for 15-20 minutes.  Mine took about 20 to cook.


8.  Enjoy!  Careful it’s pretty hot, but completely worth it!  And just enough for two!  :)

Recipe:

7.  Bake in a preheated 350 degree oven for 15-20 minutes.  Mine took about 17 to cook.
8.  Enjoy!  Careful it's pretty hot, but completely worth it!  And just enough for one!  :)

I will try to add a pic the next time I make this...I was too excited to eat it today and scarfed it down before I could capture a pic.  ;)
