Pumpkin Muffins

I have a hard time believing that it's already October again, but with all the cool weather and rain we've had here in NC lately...I should believe it!  You know what that means though, yummy, warming food!  So here are my favorite pumpkin muffins!  They are easy to whip up and you can add chocolate chips if you'd like, or they are just fabulous without them too!  Happy Autumn!  :)

Pumpkin Muffins:
2 c.  Flour (You can really easily use completely whole wheat without anyone knowing, btw!:)
1/2 c. Sugar
1 c. Pumpkin Puree (canned or homemade)
2 Eggs
1 T. Oil
1/2 t. Baking Powder
1/2 t. Baking Soda
1/8 t.  Allspice, ground
1/8 t.  Nutmeg, ground
1/8 t.  Cloves, ground
1/8 t.  Cinnamon, ground
Dash of Salt
Optional: 1/4-1/2 c. Chocolate Chips

1.  Preheat oven to 350degrees.
2.  Mix together all of the ingredients until well combined.
3.  Evenly pour the batter into lined/greased muffin tins.  (Should make 12 muffins.)
4.  Bake for ~20 minutes or until done.
Enjoy warm or room temperature! Yum!  :)

Easy Pumpkin Crumble by Our Best Bites

Last year around this time my Mom told me about this great food blog called "Our Best Bites".  It's a really great site and that's where she found this recipe for Easy Pumpkin Crumble.  I made it for a Church gathering and it went over so well that I made it for Thanksgiving!  In fact, I think we got away with just having this instead of pumpkin pie, I might be wrong though.

Anyway, I've never been a fan of pumpkin pie, but I love, love, love this stuff!  In fact, I have been wanting to make it for a while now, but am waiting till Thanksgiving because I fear I will just eat the whole thing by myself otherwise!  It's THAT good!

Pumpkin Cookies


Pumpkin Cookies
1 c. Flour
1/2 c. Quick Oats
1 c. Pumpkin*
1/4 c. Sugar
1/4 t. Cinnamon
1/4 t. Allspice
1/4 t. Cloves
1 egg
1/4 t. Salt
1/4 t. Baking Powder
1/4 t. Baking Soda
1 T. Oil
1/4 c. Chocolate Chips, Optional

*Note: If you are using the leftover pumpkin mixture from my Pumpkin Pasties recipe do not add more spices, but add an additional 2 T. of Sugar to the pumpkin.)
Preheat the oven to 350 degrees.  Mix together all the ingredients until well combined.  Drop by the spoonful or cookie scoopful onto a baking sheet and bake for about 15 minutes.  They will no flatten like most cookies.  Remove from sheet and cook on cooling rack.  Enjoy!!!  :)

Make your own pumpkin puree

This isn't rocket science, but I thought I would put up a little how to for your resource!  :)  Start out with a "Pie Pumpkin" which is a small pumpkin that is perfectly round and about 6-8" in diameter.  It should look like this one below.

 1.  Preheat the oven to 375 degrees.  Carefully cut the pie pumpkin in half and remove the seeds.  There are quite a few seeds--especially considering the size--so save them to roast!  :)
 2.  Place the halves on a baking sheet flat side down and bake for about an hour.  (Somehow I didn't get a pic of the seeded halves or them on the sheet before baking....)
3.  Once they have baked for an hour, they will look something like this....don't fret about all the creamted juices.  It happens, and isn't too hard to clean up.
4.  While the pumpkin is still hot out of the oven, carefully (with a spatula) turn over each half.  Then carefully remove the cooked flesh from the skin. (Put flesh in large bowl.) This is really easy because it's hot and all nice and cooked!  :)
 5.  Then once all the flesh has been removed from the pumpkin mash it up by hand or with a:  food processor, blender or mixer.  Then you can use it immediately (in pumpkin bread or some pie) or store in fridge for no more than 3 days.  You could also can it, and find instructions for doing so!  :)
 Yum...that makes me hungry....be on the look out for new pumpkin recipes this week!! :)
