Whole Grain Bread (with Oat flour tutorial)

 I think one of my favorite smells in the whole wide world is when bread is baking in my oven!  Yum.  :)

So, I just had to make some today.  I've been wanting to make bread with oat flour (for a few reasons, mostly the fiber content and lack of gluten) but since this was my first try I used half oat flour and half wheat flour to make sure it would rise ok.  (Since gluten--in addition to yeast--is what helps make bread rise typically...)

So I've included a tutorial on how to make your own oat flour below!  :)

How to make Oat Flour at home.  It's best to use Old Fashioned Oats, but Quick Oats work too.
1.  Just measure out 2 c. of Oats (or however much oat flour you need) and place them in a blender or food processor.
2.  Then turn on the blender/food processor and cut them up until they turn from oats to flour.
3.  Then pour into a bowl to measure as needed. 2 c. oats = 2 c. oat flour  :)
Steps 1, 2 and 3 for oat flour!
Once you have your oat flour (either made or store-bought) you can go ahead and make the bread....

Whole Grain Bread with Oat and Wheat Flours:
2 c. Oat Flour
2 c. Whole Wheat Flour (could use all purpose flour)
1 c. Water, lukewarn
1 T. Yeast
1/3 c. Milk
1 T. Oil
2 t. Honey
1/2 t. Salt

1.  Mix together the yeast and lukewarm water until combined.
2.  Add in the honey, milk, oil and salt to the water mixture.
3.  Mix in the flours one cup at a time.
4.  Let dough rest for 15 minutes.
5.  Knead dough for 5 minutes.
6.  Then shape into a loaf and place into greased bread pan.
7.  Let rise for 15 minutes in a warm place.  Preheat oven to 350 degrees.
8.  Bake bread for 25-35 minutes at 350 degrees.  (Or until golden)
9.  Immediately remove from pan.  Cool on rack or serve immediately.

Enjoy!  :)  It's great warm with butter!

Honey Oat Wheat Bread

If you like making homemade bread like I do, here's a new recipe for you!  I am constantly experimenting to figure out yummy, healthy combos.  And this one is a such show stopper!  :)  Perfect balance of healthy things and everything.  So give it a try and let me know what you think! :)  I'm going to be sending this loaf to work with my hubs for lunches this week.  So I will let you know what he thinks too!  :)


Honey Oat Wheat Bread:

1/2 c. warm water
1/2 c. warm milk
1 pkg. yeast
3 T. honey
1/2 t. salt
1 c. whole wheat flour
1 c. all purpose flour
1 c. quick oats

1. In large bowl dissolve yeast in the warm water and warm milk.
2. Add honey, salt and dash of oil. Stir.
3. Stir in wholw wheat flour.
4. Mix in all purpose flour.
5. Start kneading dough and instead of on floured surface, use oats on the surface. (Quick Oats.) Knead until the 1 c. of oats are combined.
6. Let rise in warm place for about 30 minutes.
7. Punch down and place into the desired pan for baking.
8. Let rise again for about 30 minutes.
9. Then bake at 350 degrees for about 30 minutes. You may also egg wash the top so it turns nice and golden brown.  I just decided to put some more oats on top to show off the oaty flava!   :)
