Easy Asian Pasta Salad

This is a super easy salad to make either from scratch or from leftovers from other meals!  It's easy and perfect for hot summer days!  We just ate this on our picnic this afternoon and really enjoyed it!  :)

Easy Asian Pasta Salad:
2 c. Cooked Thin Spaghetti
1 c. Veggies (Brussel Sprouts, etc...)
1/2 c. Cooked Meat or tofu, chopped
2 T. Sesame Seeds
Asian Salad Dressing

1.  Mix together spaghetti, sesame seeds and cooked meet.
2.  Prepare veggies, and then cut into bite-size pieces.  (Wash, Peel and whatever else may be needed.  If using brussel sprouts I recommend sauteing them like this tutorial.)
3.  Mix in veggies and add dressing until it is to your desired consistency.  I used about 3 T. of dressing.  :)
4.  Refrigerate for at least 2 hours before serving.  Enjoy!
Enjoy!  You can even make this a day ahead and refrigerate until serving!

Oh and this is the dressing I used. (and love for regular salads too!!)
I love this dressing because it's the perfect mix of sesame goodness (think Wendy's old Asian Chicken Salad) and really good ginger-ness! (think good Japanese Steakhouse's Salads) Yum!

Easy Fiesta Pasta Salad

I love pasta salads!  They are super versitale and super easy and usually super affordable!  :)  So here's a mexi twist on one for ya!  Just in time for hot summer nights and even hotter summer days!

Easy Fiesta Pasta Salad:
~3 c. Cooked Pasta (Any shape really, but bite-sized works best, and try to do whole grain)
1 can Beans, rinsed (Black or Pinto)
1 c. Corn
Garnish:  green onions, chives, garlic shoots, chips, cheese, etc...
Ranchalsa Dressing:
Mix 5 T.  Salsa with 5-7 T.  Ranch Dressing (Adjust to your liking)

In a large bowl combine pasta, beans and corn.  Serve and then drizzle some dressing on each serving.  Then garnish with your choice.  I used garlic shoot clippings and chips.  This is super easy, super affordable and super delish!

I just love the dressing!  It's great on lettuce salads too!  :)

Or you can make a salad and then put this pasta salad over it.  So it's a pasta salad salad!  :)  Like this...

Pasta Salad

You know, pasta salads are a nice for summer and also a good way to get creative with veggies.  So I like to experiment with them and sometimes I throw them up here.  :)  So here's what I made yesterday.  A little different than what you normally see in a pasta salad, but still delicious and nutritious!  :)  This is also one of those dished that you can make really, super easily!  For instance just cook a little extra pasta when you are going to have it for dinner.  Then measure it and set aside for the next night's pasta salad.  (That's what I just did this week...)

1 c. cooked whole wheat small shells

1 c. cooked small shells

1 c. broccoli chopped

1 sweet bell pepper chopped

2 T. Italian dressing

Just mix all these 5 ingredients together and that's it!  Enjoy!  (Serve refrigerated.)  You could always add diced ham, cheese or turkey too.  :)
