Barbecue Chicken Breasts

Well, I just made homemade barbecue sauce and used it on chicken tonight.  It was great!  A mild sauce with hint of spice from the peppercorns.  Yum.  :)  I served mixed veggies and a simple mac n cheese on the side.
I just grilled the boneless, skinless chicken breasts on my foreman grill slathering bbq sauce on it everyone once in a while.  Then once it was thoroughly cooked I slathered some more sauce on it before serving.  I can't wait to try it with bbq chicken sandwiches, bbq beef sandwiches and more! :)

Barbecue Sauce

If you live in the US, I'm willing to bet you've not only had Barbecue sauce but love it! :) Am I right?  Whether you like the thin vinegary style in Eastern Carolina, the sweet tangy Kansas City Style, the flavorful Texas style or any style in between, you like it.  In fact, maybe you like all sorts.

I tend to enjoy lot of different ones, and finally made some from scratch because I got a request for it. Thanks for the request!  I hope you like this, and you can always tweek it to your liking too!  This sauce did pass my test as well as my hubby's but I do  plan to make some variations in the future.  :)

I'm serving this on chicken breasts tonight and will post pics later to show how they turn out!


Barbecue Sauce:
6 oz. Tomato Paste (I used Hunts)
6 oz. Water
2 T. Vinegar (Apple Cider, Red Wine or Distilled White)
1 T. Peppercorns, whole
1 T. Brown Sugar
2 t. Spicy Mustard
1 t. Onion Flakes (or 1 T. finely diced onion)
1 t. Garlic Granules (or 1 T. minced garlic)
1/2 t. Salt
1/4 t. Paprika
Optional: 1 t. Liquid Smoke or 1 t. Gourmet Burger Seasoning (by Weber)

1.  In a small sauce pan combine the tomato paste, water, vinegar and peppercorns.  Bring to a boil then reduce to simmer.
 2.  Add remaining ingredients and stir.  Let simmer for at least 30 minutes.
3.  Serve along with chicken strips or on top of ribs or barbecue chicken!
Enjoy :)
Store in an airtight container in the fridge for no more than 5 days, or store in the freezer.
