Buckeyes

Ok, do you love Peanut Butter and Chocolate as much as we do? If so, this dessert is for you! They look like Ohio Buckeyes when they are done and taste just heavenly. :)

There are a lot of recipes for these online, and I have not tried them all, but this one is simple and yummy! The recipe says it yields about 30, and since I was just trying it I thought I would do a half batch. I'm glad I did because it made over 35 for me and that was just half of it! So beware . . . Here's the link to the recipe. After I mix the peanut butter mixture up and made balls, I froze them for 1 hour. Then I made a make shift double boiler for the chocolate chips with a glass casserole dish over a pot with boiling water in the bottom. It acutally worked really well too, so don't fret if you don't have a double boiler! :)
